As a child I would spend my Christmas’s with the Aunt Helen’s family. Shawn, Kerry, Tara and me would rip the house house apart playing “PMS Barbie’s”, making LEGO creations,and putting on plays. All of this was possible with a non-stop supply of cookies from my Aunt Helen.
Helen’s Shortbread Cookies
Preheat oven to 300 degrees
Cream until light and fluffy 1 cup of butter
Shortbread Cookies
Blend in 2/3 cup lightly packed brown sugar
Beat until light and fluffy Gradually stir in 2 cups flour Knead well to blend in last of flour. Turn onto lightly floured surface and roll 1⁄4 in. thick and cut into desired shapes. Bake on ungreased baking sheet in preheated 300 degree oven for 18 to 20 minutes. Makes about 2 dozen cookies.
