Aunt Helen’s Favorites; Banana Crunch Bread

This Tuesday morning after the long weekend my Aunt Helen emailed me this recipe. She said that every time she makes it people ask her for her secret recipe. For all those asking here is the best Banana Bread this side of the Welland Canal. For everyone else looking to make a delicious treat, enjoy!

Topping:

1/2 cup flaked coconut
1/4 cup packed brown sugar
1 tbsp. butter
1 tbsp. flour

Batter:

1/2 cup oil
3/4 cup sugar
1 tsp. vanilla
2 eggs
1 cup mashed ripe banana
1 3/4 cups flour
1 1/2 tsp. baking soda
1/4 tsp. baking powder
pinch of salt
1 cup White Chocolate Chips

Preheat oven to 325 degrees. Grease an 8 x 4 loaf pan.

Topping: Combine all ingredients in small bowl. Set aside.

Batter: Mix oil, sugar, vanilla and eggs in large bowl. Add mashed banana and stir until well blended. Add flour, baking soda, baking powder and salt and stir until flour in well blended. Add 3/4 cup white chocolate chips and stir. Pour into prepared pan. Top with remaining 1/4 cup white chocolate chips and cover with topping.

Bake in centre of preheated oven for about 65 – 75 minutes or until toothpick inserted in centre comes out clean. Cool in pan on rack.

Don’t worry if bread seems a little darker than you would expect. It is still very moist and yummy.
