Heather, tried this recipe today…modified from a Foodland Ontario booklet. Turned out delish!
Peachy Brown Betty
2 c. large flake rolled oats
2 c. flour
1 1/2 c. brown sugar packed
2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp salt
1 c. butter (room temperature)
2 tbsp. each cornstarch and sugar
2 tbsp. lemon juice
5 c. sliced peaches (or any berry combo)
Lightly butter 12×8 baking dish.
In large bowl stir together oats, flour, brown sugar, cinnamon, baking soda and salt.
Add butter to flour and crumble until well blended. Pat about 2/3 of this mixture to the bottom of the prepared baking dish.
In medium bowl stir together cornstarch, sugar and lemon juice until cornstarch is dissolved. Add peaches and toss until evenly coated. Pour over oat mixture in pan. Sprinkle with the remaining oat mixture.
Bake in 350 oven 40 to 50 minutes or until topping is golden and a little crisp. Serve warm or at room temperature.
