I have never met anyone in my life that love black beans as much as my cousin does. She has found a clever way go get her lovely black beans into about 50% of what she makes. This is a staple soup in her house, I hope you enjoy it as much as her family does.
Kerry’s Quick and Easy, Black Bean Soup
This is a very quick and tasty way to make black bean soup.
3 cans of black beans (do not drain)
1 can of diced tomatoes with chilies
1 can corn (drained)
141/2 oz of chicken broth, low sodium
1 diced onion
1 or 2 diced jalapenos
Fresh garlic chopped fine (as much as you want, I use 5)
1 or 11/2 tsp cumin
1 tsp chili flakes
Salt and pepper to taste
In a large stock pot, spray bottom with cooking spray and onions and sauté till opaque. Add jalapenos and garlic and sauté for another 2 to 3 minutes.
In a large blender add one can black beans and onion mixture from the stock pot, cumin and chilie. Blend till smooth. Add back to stock pot.
In blender add second can of black beans and chicken broth. Blend well and add to stock pot.
Turn heat on medium. Add last can of black beans to stock pot, as is (do not put in blender), can tomatoes and corn. Salt and pepper to taste. Sometimes I add a bit more jalapenos at this point for an extra kick. Bring to a boil.
Top with some fresh cilantro and enjoy! Goes great with cheese bread!!
