I literally just ate two bowls of this creamy heavenly dish. You know when you have cooking magic? Tonight was one of those for me. This simple dish turned out so well I’m in heaven.
Heather’s Comfort Potato Cream Soup (Shawn’s Cure)
Ingredients
3 garlic cloves
5 yellow flesh medium potatoes
3 leeks (white parts only)
¼ Spanish onion or other strong onion
1 yellow zucchini
2 tbsp diced carrot
1 tsp fresh thyme
1/2 cup of heavy cream
1 ½ cup water
1 ½ cups chicken stock
finish with freshly grated Parmesan cheese
Directions
Sauté onions, carrots and garlic about 2min, then add leeks. Leave on heat stirring often for another 5 min or until almost clear
Add diced potatoes and zucchini and cook for another 5 minutes
Add thyme
Add water and boil for 5 min, then add chicken stock and cook for 20 min or until potatoes are tender.
Remove from heat and slowly add the cream
Reserve some of the soup aside
Take the rest and puree
Place reserved soup in bowl and pour puree over mashed soup and grate cheese on top.
