Aunt Helen’s Favorites; Saganaki, Flaming Greek Cheese

Note from Aunt Helen: Here’s a recipe for mine and your dad’s favorite appetizer at a Greek restaurant. My only regret is that I didn’t get to make it for him, I know he would have really enjoyed it.

Saganaki, Flaming Greek Cheese

2 tbsp. all purpose flour
1 slice (4 oz.) Kefalotiri or Keflograviera cheese (these cheeses can be purchased at Zehr’s or Sobey’s or any Greek grocery store)
1/3 cup extra virgin olive oil
1 tbsp. ouzo or brandy
1 lemon wedge

Spread flour on plate; press both sides of cheese into flour to coat. Discard remaining flour.
In small skillet, heat oil over medium heat until hot enough to produce small bubbles when wooden spoon is inserted into oil, fry cheese, turning once, until golden brown, about 4 minutes.
In a small saucepan, heat ouzo or brandy over high heat until steaming hot (or microwave for 10 to 15 seconds).
Place cheese on fire resistant plate, pour ouzo or brandy over cheese and ignite. When flames subside, squeeze lemon over cheese.
