Sweet Potato’s, Bring them on!

As part of my detox I am incorporating sweet potato’s into my diet, not to replace white potato’s but to enhance my choices. I keep hearing great news about these funny looking orange potato’s, and below are a few health benefits and links to find out more.

Health benefits of sweet potatoes:

  • full of antioxidants
  • contain anti-inflammatory nutrients
  • blood sugar-regulating nutrients
Seriously, why have I waited this long.

    My favourite is a salad with the steamed sweet potatoe tossed in a honey mustard vinaigrette. Then you add celery, red onion, parlsey. The recipe is from the Moosewood Restaurant Cooks At Home, p. 135. Also quite good if you roast them with carrots or potatoes tossed with spices such as paprika, onion powder, salt and pepper.
