F!@ken Awesome Sweet n Sour Pork Balls

How a name says it all! Dammmmmmm  Dinner was so very, very amazing tonight. A joint effort with JJ n I.  Pork Balls were my contribution and his the sauce (a.k.a. Gravy).

Directions:

Gravy

2 Cups full body red wine

1 cup chicken Stock

3/4 tbsp  minced shallot

pinch minced garlic

one chilli pepper minced (seeds included)

4-5 fresh tomatoes peeled \canned (from a 28oz can), add a splash of the juice from canned tomatoes to the sauce

1/2 bay leaf

kosher salt to taste

finish with 1tsp balsamic vinegar and 1 tsp of fresh honey

Directions:

Heat med size sauce pan – medium heat add olive oil sauté shallots

add wine heat until alcohol until evaporated, chicken stock bring to simmer, bay leaf  and then reduce by half

while reducing add pinch of garlic then honey and hand crush tomato’s, reduce again.  Add a pinch of fat from the meatballs.

add 1 tsp of balsamic 2 min before you are going to serve.

Meatballs

1 pound of organic pork

1 cup fresh bread broken into .5 inch pieces (I did not include this in my balls for the Paleo plan)

1 tsp shallot

3 cloves roasted garlic

1/4 cup of toasted pine nuts

2 tbsp basil

1 tsp thyme

salt and pepper to taste

Directions:

Loosely mix meat and all ingredients and roll into 1 inch balls

I had bacon fat left over from breakfast and I sautéed the balls in the bacon fat – OHHH YEAH

Once browned I placed in oven at 350 for 20 min.

When meatballs where cooked, 20 min later we mixed with gravy and then ate like it was our last meal!
