Aunt Helen’s Favorites; Broccoli au Gratin

Broccoli au Gratin

2 bunches of broccoli
1⁄4 cup butter
1 clover garlic finely chopped
1 onion thinly sliced
1⁄4 cup all purpose flour
2 cups milk
1 tsp salt
1⁄4 tsp pepper pinch of each nutmeg and cayenne pepper
1 1⁄2 cups grated cheddar cheese

1 cup breadcrumbs 3 tbsp butter melted
1⁄2 cup grated cheddar cheese
2 tbsp parsley

Steam broccoli until just tender. Melt butter in a saucepan. Add garlic and onion. Cook gently until tender. Sprinkle with flour. Cook stirring constantly. Whisk in milk. Bring to boil, add seasoning. Cook for about 5 minutes. Stir in cheese. Remove from heat. Combine broccoli with sauce. Transfer to a buttered casserole dish. Mix all the ingredients for the topping together and sprinkle on top of broccoli mixture. Bake in a preheated 350 degree oven for 20 minutes or until thoroughly heated.
